Voila! Try out this delectable breakfast dish that can be made in under 5 minutes {depending on how fast you move in the mornings}.
Avocado Egg Toasts
Yield 2 Servings
Recipe adapted from Martha Stewart's "Sesame Toasts with Poached Eggs and Avocado." {February 2013}
Ingredients
- 1 large avocado
- 1/2 tablespoon lemon or lime juice {I always use lemon.}
- 2 pieces of toast {We use a soft multigrain or slices from a ciabatta loaf.}
- 2 eggs
- grated Parmesan cheese
- salt and ground black pepper to taste
Instructions
- First get your bread of choice into the toaster.
- While the bread is heating, scoop out the avocado into a small bowl and mash it together with the lemon/lime juice until it’s spreadable.
- Cover your bread with the avocado spread.
- {Disclaimer: This is how WE fry our eggs. There are a dozen ways to do this…so try it this way or just make your eggs in whatever way you prefer.} Spray a large non-stick pan with Pam {or butter it up}. Crack open your eggs while being careful not to break the yolks. Let the egg whites turn a bit white and firm up before adding 2-3 tablespoons of water to the pan. Cover the pan with a lid and watch the steam quickly fry your eggs while keeping the yolks runny. Once you see the egg yolks turn a bit frosted looking, take the eggs off the heat.
- Using a spatula, carefully lay an egg {haha} on top of the avocado spread on each piece of toast.
- Sprinkle salt and pepper onto each egg, then top it off with the grated Parmesan cheese.
- Enjoy the absolute deliciousness of avocado and eggs and cheese, oh my!
