Here is another dish that’s great for a weeknight meal. Justin made this in under 30 minutes flat! Crusted Salmon with Honey Mustard Sauce
Yield 4 Servings
Recipe adapted from Liza at Salu-Salo.com {who originally adapted it from AllRecipes.com}.
Ingredients
- 4 salmon fillets {about 1 1/2 lbs}
- 1 cup Panko breadcrumbs
- 3 tablespoons grated Parmesan cheese
- 1 large egg
- 1 cup butter {melted}
- 1 1/2 tablespoons Dijon mustard
- 3 tablespoons honey {or agave}
Instructions
- Preheat your oven to 350°F and spray a baking sheet with cooking spray.
- Combine the bread crumbs and Parmesan together in a shallow dish and beat the egg in a small bowl.
- Dip the salmon in the egg and then coat it with the bread crumb mixture. Firmly press on the salmon to make sure the breadcrumbs stick!
- Place the coated salmon pieces on the prepared baking sheet and bake for 15 minutes {or until the salmon fillets flake easily with a fork} turning them once.
- In a bowl, stir together the melted butter, mustard, and honey.
- Drizzle the sauce over the baked salmon and serve it with your favorite vegetables! {We loved this dish with these Honey Roasted Brussels Sprouts, as seen pictured below.}
