Have you ever visited Smitten Kitchen? If not, you’re in for a treat! Deb has a really, really great eye for delicious recipes and she even has her own cookbook that came out last October. I found this delectable little blueberry bar recipe on Pinterest and was pleased to see that it led me to Deb’s site. I’ve made several of her recipes in the past and she has never led me wrong {except that I’ve learned we must have very different ovens so I always watch my cook times when I make her recipes}. These blueberry bars were a major hit when we had visitors over to see the baby {who is one month old already!} and I found them hard to resist when I was home alone with them {not good as they are in no way healthy}!
Blueberry Crumb Bars
Yield 12 bars

Ingredients
- 1 cup white sugar
- 1 teaspoon baking powder
- 3 cups all-purpose flour
- 1 cup cold, unsalted butter
- 1 egg
- 1/4 teaspoon salt
- zest and juice of 1 lemon
- 4 cups fresh blueberries
- 1/2 cup white sugar
- 4 teaspoons cornstarch
Instructions
- Preheat your oven to 375 degrees F.
- Grease a 9×13 inch pan.
- In a medium bowl, stir together 1 cup of sugar, 3 cups of flour, and baking powder. Mix in the salt and lemon zest, then use a fork or pastry cutter to blend in the butter and egg. {The dough will be crumbly.}
- Pat half of the dough into the prepared pan.
- In another bowl, stir together the sugar, cornstarch, and lemon juice, then gently mix in the blueberries.
- Sprinkle the blueberry mixture evenly over the crust then crumble the remaining dough over the berry layer.
- Bake for 45 minutes, or until the top is slightly brown.
- Cool the bars completely before cutting into squares.
