A couple of months ago, I was chatting with a coworker, telling her about all of the great recipes I was excited to post up onto my website. Now this coworker is one of the best listeners I have ever met and she just lets me babble on and on. I sat there, talking her ear off, telling her about of the amazing dishes that Justin and I cook. During a brief pause in our conversation when I stopped talking (probably to take in air), she quietly mentioned, “I have the best white chocolate macadamia nut cookie recipe ever.”
She got my attention when she said this so I of course probed her for more information. “Really?” I asked. She stood there with sincere pride and confidence and said, “Yes. The most AMAZING white chocolate macadamia nut cookies EVER. Seriously.” Now I have heard people say things like this before about other recipes, but I don’t remember anyone ever looking as genuine or fully convinced as she did. So of course I begged her to make me some…and she DID!
Hands down, the most AMAZING white chocolate macadamia nut cookie EVER! The poor cookie just melted in my mouth with no resistance whatsoever. It was soft and delicious and tasted like a cookie from a professional bakery. I am not exaggerating and neither was my coworker. She really does have the best recipe ever and she was so nice to give it to me and told me I could post it here. Make these cookies. And share them. People will love you for it.

The Most Amazing White Chocolate Macadamia Nut Cookies
Yield 18-24 cookies
Ingredients
- 2 1/4 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butter softened
- 1 cup packed light brown sugar
- 1/2 cup sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 cups white chocolate chips
- 1 cup macadamia nuts
Instructions
- Preheat your oven to 375 degrees.
- In a medium bowl, mix together the flour, baking soda, and salt. Set it aside.
- In another bowl, cream together the butter and both sugars until light and fluffy.
- Beat in the eggs and the vanilla.
- Gently mix in the flour mixture until combined.
- Fold in chips and nuts.
- Spray cookie sheets and form about 18 to 24 cookies.
- Bake 9-12 minutes until golden, turning sheet around every FIVE minutes. {Very important.}
- Transfer to wire racks and let cool.
